This week is UK Coffee Week, A week to celebrate all things Coffee and to help raise some money for a very important cause, “Project Waterfall”

Project Waterfall aims to help bring clean water to the communities that grow our coffee, this year it is supporting the Jabi Tehnan district in Ethiopia.

The History of Coffee

Did you know that the earliest reports of coffee drinking was in the Arabian Peninsula in the 15th Century and was consumed as part of a religious ritual to help worshippers stay awake!

Coffee Recipes

Homemade Coffee Ice Cream

With the weather steadily getting warmer, what better a treat to make than this delicious homemade coffee ice-cream.
You don’t even need an ice cream maker!
Made with decaffeinated coffee, its even suitable for the kids

Makes 1.5 L of ice cream

Ingredients
  • 600ml Whipping Cream
  • 200g Sweetened Condensed Milk
  • 3 Tbsp Instant De-Caf Coffee
  • 2 Tbsp Water
Method
  1. In a large bowl mix the coffee with water.
  2. Add condensed milk and stir together
  3. Finally add the whipping cream
  4. Whisk together until light and creamy.
  5. Pour into an air tight container and freeze for 3-4 hours.
  6. Serve (with chocolate sauce and sprinkles if desired)

Mocha Mousse

A delicious, rich, indulgent dessert (not suitable for under 1yrs due to raw egg)

Ingredients

  • 150 g plain chocolate
  • 2  egg yolks
  • 45 g caster sugar
  • 150 g full-fat creme fraiche
  • 150 ml double cream
  • 1 tsp instant decaffeinated coffee granules
  • finely grated chocolate, to decorate

Method

  1. Break the chocolate into a microwaveable bowl and melt in 30 second blasts until all is melted (stirring between each interval)
  2. Put the egg yolks and sugar in a heatproof bowl.
  3. Set the bowl over a pan of simmering water
  4. Whisk with an electric hand whisk on low for about 4 minutes
  5. When the mixture becomes paler and thicker remove the bowl from the heat and carry on whisking for 1 more minute.
  6. Set aside to cool slightly, but still stirring so the mixture does not stiffen.
  7. Dissolve the coffee in 1tbsp water
  8. Pour the cream into a medium mixing bowl and whisk until soft peaks
  9. Fold in the crème fraîche and coffee mix to the cream.
  10. Fold the cream mixture into the cooled chocolate, then fold in the egg yolk mixture.
  11. Stir thoroughly to ensure everything is well combined.
  12. Spoon into glasses and chill for 1 hour.
  13. Decorate with chocolate shavings.

International Carrot Day – Carrot Cake Recipe

Did you know that the 4th of April is International Carrot Day?! No? Well it is, so to celebrate all things carroty I thought Id share with you a very yummy Carrot Cake Recipe.

Ingredients

For the Cake

  • 450ml Vegetable oil
  • 400g Plain Flour
  • 2 tsp Bicarb of Soda
  • 550g Caster sugar
  • 5 eggs
  • ½ tsp salt
  • 2½ tsp ground cinnamon
  • 525g Grated carrot

For the Icing

  • 200g Cream Cheese
  • 150g Icing Sugar
  • 100g Butter

 

Method
  1. Preheat the oven to 180C/160C Fan/Gas 4.

  2. Grease and line a 10in cake tin.

  3. Mix all of the ingredients for the carrot cake together in a bowl until well combined.

  4. Pour into the cake tin and bake for 1 hour 15 minutes, or until cooked through

  5. Remove from the oven and set aside to cool completely

  6. For the icing; beat the cream cheese, icing sugar and butter together in a bowl until light and fluffy.

  7. Once the cake is cool, spread the icing over the top of the cake

  8. Decorate with carrot sugar decorations if desired
