Did you know that the 4th of April is International Carrot Day?! No? Well it is, so to celebrate all things carroty I thought Id share with you a very yummy Carrot Cake Recipe.
For the Cake
- 450ml Vegetable oil
- 400g Plain Flour
- 2 tsp Bicarb of Soda
- 550g Caster sugar
- 5 eggs
- ½ tsp salt
- 2½ tsp ground cinnamon
- 525g Grated carrot
For the Icing
- 200g Cream Cheese
- 150g Icing Sugar
- 100g Butter
Preheat the oven to 180C/160C Fan/Gas 4.
Grease and line a 10in cake tin.
Mix all of the ingredients for the carrot cake together in a bowl until well combined.
Pour into the cake tin and bake for 1 hour 15 minutes, or until cooked through
Remove from the oven and set aside to cool completely
For the icing; beat the cream cheese, icing sugar and butter together in a bowl until light and fluffy.
Once the cake is cool, spread the icing over the top of the cake
- Decorate with carrot sugar decorations if desired
