This Rainbow Cheesecake is soooo much fun to make, incredibly tasty and can be made in a variety of colours to suit the occasion – think superhero cheesecakes in red and blue or christmas cheesecakes in red and green with matching sprinkles.

What you will need:

♦ x5 digestive biscuits in a ziplock bag
♦ x3 small bowls, each with 50g cream cheese and 2 drops of food colouring in
♦ Cup with 20g of icing sugar
♦ Large bowl with 200ml whipping cream or double cream
♦ Small rolling pin
♦ 1tsp vanilla extract
♦ Coloured sprinkles
♦ Small plastic tub or cup – to make the cheesecake in

Method

1. Begin by bashing up the biscuits using the rolling pin. (kids love this part, it gets very noisy!! just make sure they don’t get carried away and break a hole in the bag!!)
2. Pour the bashed up biscuits into the bottom of your plastic tub
3. Add the vanilla extract into the whipping cream and whisk until stiff peaks
4. Pour in the icing sugar and mix together
5. Divide the cream mixture evenly between the 3 bowls of cream cheese with colouring in
6. Stir each bowl until the colours have changed and the mixture is smooth and even
7. Layer the colours on top of the biscuits in your tub
8. Top with some sprinkles of your choice
9. Place in the fridge for 10 mins or until ready to eat

Will last for 2 days in the fridge
